No-egg Egg and Sausage sandwich

Eggs are often hard to omit from most peoples diet:(. Well JUST egg and Upton Chorizo Seitan came to the rescue and we are going to make a vegan sausage egg sandwich!

Vegan no-egg Egg and Sausage sandwich


ST egg

Mayo(under Condiments in this site:)

UPTON chorizo seitan

black salt or regular iodized salt(get the iodized salt for our thyroids) to taste

black pepper to taste


100% Whole Wheat bagels(You know it's whole Wheat because the first ingredient is Whole Wheat Flour and the second(or third or fourth) ingredient is Vital Wheat Gluten and there is no wheat flour in the ingredients because wheat flour is white flour and any baked goods with wheat flour are not 100% whole Grain)

Additional mixins:

chopped onion

chopped green onion

chopped potato

Toast a 100% Whole Wheat bagel. Heat a Pampered Chef non-stick pan(I bought mine on Ebay for a great price) until water dances in it. Shake the JUST egg and pour into the pan just covering the bottom of the pan. Crumble the UPTON Chorizo seitan, distributing it atop the JUST egg. Sprinkle black salt or regular iodized salt and pepper onto the JUST egg like you would season an egg. Throw some spinach in the egg mixture and/or chopped onion or potato. You decide. Then once the JUST egg begins to bubble in the pan, using a plastic spatula, fold the JUST egg over on top of itself all around the edge of the pan. Then flip the mixture and spread mayo atop the toasted bagel. When there is no more wet JUST egg, flip the patty one more time and then load the patty onto the mayoed bagel. Toss a few spinach leaves atop of the patty, put the top of the bagel on top. And ENJOY!

1 14 oz firm tofu

1 Tbsp lemon juice

1/4 tsp dijon mustard

1 tsp apple cider vinegar

1 vegan flax egg

1/2 tsp black salt

1/4 tsp sugar

1/2 tsp iodized salt

1 Tbsp white miso

Make the flax egg(1Tbsp flax meal and 3 Tbsp water). Put the tofu, lemon juice, dijon mustard, ACV, black salt, sugar, miso and iodized salt into the blender. We must wait 5 minutes for the flax egg to gel. Once gelled, add the flax egg to the blender and blend.

This mayo is so incredibly delicious and will make every sandwich, potato salad, no-egg egg salad taste phenomenally. Enjoy!!
