Chipotle black bean Burgers/snacks/Salad toppings




2 cups cooked quinoa

1 15 oz can refried black beans(Trader Joes has a great non-fat one)

1/2 green bell pepper(I used 1 whole because it was small)

1/3 cup red onion

1 medium carrot, shredded

2 Tbsp fresh cilantro, chopped(I didn't have so didn't add:))

1/4 cup vegan mayonnaise(I used my mayo under my site's condiments section)

1/2 cup whole grain breadcrumbs(I used 2 pieces of Dave's bread toasted)

1 tsp chipotle seasoning

salt to taste


Preheat the oven to 375 degrees.

Toast the bread for the bread crumbs and chop it up. Add the rest of the ingredients into a large bowl and toss in the breadcrumbs. When I made this recipe, it came out too wet because I used my mayo instead of store bought mayo and mine has no oil so it made the burgers wet so I added more bread crumbs(more like a whole cup) and I cooked the burgers for longer than 40 minutes.

Make patties(3 inch diameter and 1 inch thick) and cook them on a parchment paper or Silpat mat for 1 hour 10 minutes, flipping them halfway in between, after 35 minutes. If they are still wet bake for a bit more. Great chipotle flavor and are great a a snack or broken up on a salad, or as a burger but savory not sweet:)
