Best Vegan Beet burger ever!!!!

There is an incredible beet burger in Costa Mesa at Sea Birds!!!! I eat pickled beets on my salad every day so I eat beets a lot but I wanted my own beet burger. I found this recipe and changed it a little bit and I eat it with barbecue sauce and sauerkraut. There was a fantastic burger place in Dallas Texas called Judge Roy Beans and they always served their burgers with barbecue sauce and (bacon). I didn't eat there very often and will never eat there now, but I'm hooked on barbecue sauce and burgers:).


Beet Burger

1/2 cup minced red onion

2 large or 3-4 small garlic cloves minced

1 cup finely shredded beet(a medium sized beet makes about a cup)

1 tsp smoked paprika

1/2 tsp dry mustard

1/2 tsp ground cumin

1/2 tsp ground coriander

1/4 tsp ground turmeric

1 1/2 cups cooked organic black beans drained and rinsed (I just found out that beans are on the Dirty Dozen list - how much round-up have I eaten so far:()

1 cup cooked quinoa

1 Tbsp ground flaxseeds

1 Tbsp white miso paste

1/2 cup organic rolled oats ground into flour

1/4 cup ground walnuts


Preheat oven to 375. Cook black beans or use canned. Smash the beans until most are mash. Cook the quinoa. Set aside. Blend 1/2 cup rolled oats into flour. Set aside. Shred the beet.

 Into a large bowl, smash the beans until most are mash. Add the beets, quinoa, flaxseeds, miso, oat flour, onion, garlic, walnuts and all the spices. Mix well. Make burgers and place on parchment paper on a cookie sheet. Bake for 30 minutes, flipping every 15 minutes. Delicious with barbecue sauce.
