Chocolate Chip Very Healthy Blondies
1 1/2 cups cannellini beans (1 can rinsed and drained)
1 cup maple syrup or date paste(I used date paste)
1 Tbsp almond or peanut butter(I used almond butter)
2 Tbsp ground flax seed meal soaked in 4 Tbsp water for 15 minutes
1 tsp vanilla extract or vanilla paste, or vanilla bean powder
1/2 cup whole wheat pastry flour
1/2 tsp baking powder
1/4 tsp salt
3/4 cup vegan chocolate chips(I used mini Gerbs but use any vegan chocolate chips)
Preheat the oven to 350 degrees F. In a food processor, create date paste by putting one cup of dates packed into a blender with 1 cup very hot boiling water. Allow to sit for 10 minutes. Blend until smooth. Put in a bowl aside. Blend the beans and almond butter and flax seed meal together until smooth and creamy. Add the bean mixture and date mixture to a bowl and add the vanilla if using extract. In a separate bowl add the flour, baking powder and salt and vanilla bean powder if using. Whisk. Add the bean mixture to the flour mixture and combine. Add the chocolate chips and distribute throughout the mixture. Line an 8-inch square baking pan with parchment paper and spoon the batter into the pan pressing it out into the corners of the square. Bake for 35-40 minutes until a toothpick comes out clean. Let stand for 20 minutes and store in a covered container in the refrigerator. Enjoy!!!
To turn your blondies into brownies:
1/2 cup cocoa powder
1/2 cup melted baking chocolate
That's it. Use the recipe above and add chocolate and you will have incredible brownies:) And who doesn't love brownies!!!
