Excellent Tzatziki

Tzatziki
1/2 cup finely grated cucumber
! cup thick vegan greek yoghurt
1 Tbsp fresh lemon juice
Drizzle of extra-virgin olive oil
2 cloves of garlic pressed
1/4 tsp iodized salt
1 Tbsp chopped fresh dill
1 Tbsp chopped fresh mint
Squeeze out all the water from the finely grated cucumber, using a towel or sieve. Place the dry cucumber into a bowl saving the olive oil for last and mix well. Drizzle a tiny bit of extra virgin olive oil over the bowl and mix in. This is one way I eat my tzatziki.

This is a 100% whole wheat bagel from Ralph's (Kroger makes them), toasted and them topped with tzatziki on one half and my mayo (look under condiments) on the other. Then I add three slices of turkey loaf on the mayo half and then add a thick slab of tomato topped with vegan mayo on top, and then add a fistful of arugula onto the tzaziki half. And then I smash it all together. It's messy but it's delicious and you can add more mayo or tzatziki to your bites as you eat it because its all so good for you!!!
