Highprotein Banana Bread
2 very ripe bananas
1/2 cup unsweetened organic soy milk
1/4 cup maple syrup or honey or date paste
2 Tbsp yogurt
1 tsp vanilla
1 cup vital wheat gluten
1/2 cup oat flour (just blend 1/2 cup of oats in you blender until flour results)
1/4 cup vanilla or plain protein powder(for more protein)(I just used more date paste
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp iodized salt
1 tsp cinnamon
Preheat oven to 350. Line a loaf pan with parchment paper. Mash bananas in a bowl then whisk in all the wet ingredients. In a separate bowl mix all the dry ingredients. Add the dry ingredients to the wet ingredients until just combined. Dough will be thick and slightly stretchy - that's correct
Fold in any add ins. ( added date chocolate chips) Press batter firmly into loaf pan. Bake for 40-45 minutes until firm and toothpick comes out clean. (I did 45 minutes)
Allow to cool completely. Enjoy!!!
