High Protein Un-chicken Salad
1 high protein block of tofu(Trader Joes)
5-7 stalks of celery, chopped fine
1- 11/2 cups of cut-up grapes
1/4 cup chopped finely red onion
3/4 cup mayo
Salt and pepper to taste.
Crumble the block of tofu into a large bowl. Add the chopped celery, grapes, and red onion. Mix well. Add my mayo and mix throughout. Enjoy on 100% whole wheat toast, or 100% whole wheat pita, on crackers. Or just a bowl of it for a snack. Enjoy.
MAYO
1 pkg. of shelf stable firm tofu
1 Tbsp lemon juice
1 tsp apple cider vinegar
1 Tbsp flax seed meal
1 Tbsp white miso
1 tsp black salt
Blend. Instant delicious mayo.
