Meaty with Tofu Sloppy Joes

My daughter asked for Sloppy Joes so I looked up recipes, but most had oil in them. I have found that just leaving the oil out doesn't wreck most recipes and I added quinoa to mitigate the onion and bell pepper in the mixture and Voila! Meaty with Tofu Sloppy Joes! Delicious and made in 1/2 hour!


Meaty with tofu sloppy joes


To make the tofu crumbles:

14 -16 oz of extra firm tofu

1 Tbsp vegan Worcestershire sauce

1 Tbsp water + 1 Tsp water

2 tsp garlic powder

2 tsp onion powder

2 tsp chili powder

2 tsp smoked paprika

1/2 tsp liquid smoke


To make the sloppy joe sauce:

1 cup chopped bell pepper

1 cup chopped onion

1 tsp garlic powder

1 28 oz can of tomato sauce

1 Tbsp vegan Worcestershire sauce

1 tsp chili powder

1 tsp cumin


To make the quinoa:

3/4 cup of quinoa

1 1/2 cups of water or veggie broth(I used veggie broth)




Preheat oven to 350. Line a baking sheet with parchment paper. Make the sloppy joe tofu first, because it must bake for 40 minutes. Mix the Worcestershire , water, garlic powder, onion powder, chili powder, smoked paprika and liquid smoke in a medium sized bowl. Whisk. Crumble the tofu into the bowl and coat the tofu in the sauce.(I used a small spatula). Once the crumbled tofu is coated, spread the tofu across the parchment coated cookie sheet in one layer. Bake at 350 for 20 minutes. Add the green bell pepper and onion to a pot and saute until soft, about 10 minutes. Rinse the quinoa until the water runs clear. Place the quinoa and water or broth into a 4 quart pot and bring to a boil. When the pot reaches a boil, turn down the heat to low and simmer for 20 minutes. Set aside. When the timer goes off for the tofu, flip the tofu and bake for 20 more minutes. To the onion and bell pepper, add the garlic powder, tomato sauce, Worcestershire sauce, chili powder, and cumin. Bring to a boil and then turn the heat down to a simmer. Simmer for 10 minutes, then turn off the heat and set aside. Once all parts are cooked, place the cooked tofu and quinoa into the tomato sauce mixture and stir to combine. Enjoy the Sloppy Joes. They are sloppy but delicious.
