Sweet Potato Fries Dipped in Caesar Dressing


Sweet potato fries are delicious!!!! I cut them up with a mandolin or by hand(If they are really big, I always use a mandolin, smaller, by hand mostly). Once they are cut up, I just lay them on a stainless steel cookie sheet (or if you don't have stainless steel cookie sheet just put parchment paper over your cookie sheet-aluminum cookie sheets or pans are linked to Alzheimer's so always use parchment paper to cover pans if that's what you have) on a single layer separate from each other. Bake at 400 degrees F for 45 minutes. I'm sorry there aren't more sweet potato fries but my husband and demolished them. These were all I could cull for the photo:( Plus I was making a salad and I had my dressing out and I also had my caesar dressing out and I poured some caesar dressing into my 3-2-1 dressing (It was incredible!!!) and I just dipped some sweet potato fries into the caesar dressing and it was delicious!!!

3 oz. medium, medium firm, regular or silken tofu

1/3 cup water

1/3 cup freshly squeezed lemon juice

3 Tbsp soy sauce

3 Tbsp dijon mustard

3 Tbsp almond meal

3 Tbsp nutritional yeast

1 Tbsp balsamic vinegar

1 Tbsp white miso

1/2-4 cloves of garlic, minced (depending upon how much garlic you like:)


Throw everything in a blender and blend until smooth!!! This is the total bomb!! You will absopositively love this caesar dressing!!!!
