Cuban black beans bonanza

Cuban Black Beans


1 lb black beans, rinsed, sorted

1 small yellow onion, diced

1 green bell pepper, diced

1 tsp salt

1 tsp cumin

1 tsp oregano

2 bay leaves

1 Tbsp minced garlic(5-6 cloves)

5 cups of water


Chop one small onion and one green bell pepper finely. Place them into the Instant Pot and saute them for 10 minutes(The saute function on the Instant Pot goes for 10 minutes) stirring the pot periodically throughout(add water or broth 1 Tbsp at a time to keep them from sticking). Mince, 5-6 garlic cloves and add to the Instant Pot.(During the 10 minute period) thereby sauteing the garlic. Stir. Once saute is finished, add the cumin, salt, oregano and bay leaves to the Instant Pot and stir thereby coating the onions, bell pepper and garlic with all the spices. Add the black beans and 5 cups of water(In the video I said and used 6 cups of water and they came out a little thinner than I like so I'm changing the water to 5 cups:)) Stir. Pressure cook for 35 minutes. Taste. If not done, cook 20 more minutes. These beans are delicious with rice and/or grouts, sour cream and salsa. Even with avocado:). Enjoy:)
