Vegan no-oil Very Moist Molasses Bread

Molasses Bread


1 1/2 cups of whole wheat flour

1 cup of oat flour

2 tsp baking soda (In the video I said baking powder!!!! Wrong! That's what I get for putting all the ingredients in little bowls:()

1/2 tsp iodized salt

1 1/2 cups soy milk

2 Tbsp apple cider vinegar

heaping 1/3 cup of applesauce

1/2 cup of molasses

1 cup pf raisins

1 cup of walnuts, chopped


Preheat oven to 325. Pour soy milk into a container and add the apple cider vinegar. Stir to combine. Make one cup of oat flour by blending 1 cup of oats in the food processor until the oats are flourlike. Add flours, baking soda and iodized salt to a large mixing bowl. Whisk to combine. Combine applesauce, apple cider vinegar, molasses, and soy milk to another bowl and whisk to combine or put the soy milk in the dirty blender, then add the applesauce, apple cider vinegar and molasses. Blend. Add the wet ingredients(the molasses mixture) to the dry ingredients(the flour mixture) and mix until little to no flour is visible(It's okay if just a little is visible-the baking will take care of it). Stir in 1 cup raisins, and one cup chopped walnuts. Pour combined mixture into a loaf pan, pre-greasing the pan or placing a piece of parchment paper in the pan if not using a silicone loaf pan(I used a silicon loaf pan) . Bake at 325 for 1 hour. Let cool before removing from pan. Enjoy!
